Sweet potato spread 🍠🍽️, a quick and easy recipe for a nourishing dinner for autumn🍁🍂, or cold, windy days.
Serves 2 - V, - P, + K
1 big or 2 medium sweet potatoes 🍠
5 cm piece of leek
A bunch of parsley
1/2 lemon 🍋
A table spoon of roasted sesame seeds
1 table spoon of sesame oil
1/2 teaspoon of Roman cumin
2 pinches of black pepper
1/3 teaspoon of cinnamon and
Salt to taste
Until the potatoes are boiling, in sesame oil roast half a teaspoon of Roman cumin and a dash of cinnamon, then add few slices of leek and fresh parsley, mix and saute until the parsley's smell comes out.
When the potatoes are ready mash them and add to the mixture with the black pepper & salt to taste.
Sprinkle it with lemon 🍋 and add roasted sesame seeds on the top.
Serve it with bun, flatbread or pita bread & green salad 🥗. You can top it up with roasted tempeh slices to make it fancy.
I used whole wheat bun and whatever vegetables I found in the fridge.
Note: if you are Kapha 🌊 dominant use some chilli flakes to make it more digestible for you.
