Beluga Lentil Stew

Beluga Lentil Stew

Beluga Lentil is rich in iron and fiber and relatively easy to digest therefore it is recommended also for Vata types.


Serves 2-3


It is tridoshic however lentils are slightly heating and so this dish too, if you have a Pitta imbalance use the modifications I suggest for Pitta, or choose beans instead.

If you are a kapha type feel free to add some chilli and serve it with quinoa during winter time.




1 cup of Beluga lentils

One small or half of a big onion

1-2 cloves of garlic

2*2 cm piece of ginger shredded

a handful of parsley & cilantro (use cilantro for Pitta)

1 medium carrot

4-5 small tomatoes (cocktail size) (can omit for Pitta)

1/2 teaspoon roman cumin

1/2 teaspoon turmeric

1&1/2 teaspoon coriander seed powder

1/2 teaspoon black pepper

1 bay leaf

a teaspoon of tamarind (mix it in water) (use lime for Pitta)

1 tablespoon soy sauce (can omit for Pitta)

salt to taste

2 tablespoon of butter/cold pressed sunflower oil


Method:


Wash the lentils well and soak in water for about 30 mins.


Sautee the onion in the oil until its transparent, then add the ginger, garlic, roman cumin & small square chopped carrot. Sautee them together for a minute or two until the nice smell starts coming. Now add the tomatoes, turmeric, coriander, bay leaf, black pepper and mix it well.

Next is to add the lentils, soy sauce, the tamarind mixed in water and salt.

5 mins before its ready add the greens (parsley & cilantro).


Serve it with rice.
